Ingredients
2 servings
2 tspolive oil
5cloves garlic
minced
3Thai bird’s eye chili
deseeded and finely chopped
0.5 lbboneless skinless chicken breasts
cut into 1-inch chunks
snap peas
Broccoli
Small
red bell pepper
20 leavesThai basil
1egg
crispy fried, optional, cooked with minimal oil
Brown rice
or quinoa, to serve
Sauce:
Instructions
Step 1
n a small bowl, mix together 2 tablespoons of water with reduced-sodium soy sauce, reduced-sodium dark soy sauce, and honey or maple syrup.
Step 2
Heat olive oil in a wok or frying pan over medium-high heat. When hot, add minced garlic and chili, stirring for about 10-30 seconds.
Step 3
Add chicken and cook, tossing, until golden brown and cooked through.
Step 4
Add mixed vegetables to the pan and stir-fry until they are slightly tender.
Step 5
Pour in the sauce and cook until it reduces slightly and coats the chicken and vegetables.
Step 6
Remove the pan from heat and stir in the Thai basil.
Step 7
Serve the Thai Basil Chicken over brown rice or quinoa and top with a crispy fried egg if desired.
