10shrimp
deveined and peeled

0.25onion
julienned

0.5shallot
finely diced

1clove garlic
minced

4 stemschinese broccoli
gai lan, chopped

2 cupsrice
cooked, day-old

thai basil
chiffonade, to garnish

salt
to taste

Tom Yum Sauce
Instructions
Step 1
Prepare your ingredients by mincing garlic and chopping chinese broccoli (gai lan), onion, shallot, and the white part of a lemongrass stalk. De-clump your day-old rice as well.







Step 2
Make sauce by combining tom yum paste, fish sauce, lime juice, lemongrass, lime juice, and sugar.





Step 3
In a wok or pan over medium-high heat, add a bit of oil. Fry shrimp and season with salt until just cooked (about 1 min each side). Remove shrimp and set aside.



Step 4
Add onions and sweat for 30 seconds. Then add chinese broccoli (gai lan), shallots, and garlic and cook until fragrant (about 30 seconds).




Step 5
Turn up the heat to high. Add day-old rice and use a spatula to break up clumps and toss.


Step 6
Add back prawns and mix in the tom yum sauce. Season to taste with salt if necessary.

Step 7
Set rice aside in a bowl and wipe down the wok. Add a healthy splash of oil and fry your eggs to your desired doneness.


Step 8
Plate up rice. Top with a fried egg and chiffonade Thai basil.
