Instructions
Step 1
Cook the rice in 250ml water per person, covered for 12-15 minutes
Step 2
In a salad bowl, mix the white wine vinegar with the sugar. Slice the cucumber in thin slices and add to the bowl. Season to taste with salt and toss occasionally to incorporate flavors.
Step 3
Zest and squeeze the juice of the lime. Press the garlic and finely chop the red chili. Roughly chop the peanuts and fresh cilantro. Peel apart the leaves of the little gem lettuce. Each person should have 3 lettuce wraps.
Step 4
In a small bowl, mix the brown sugar with per person, 1 tbsp lime juice, .5 tsp of lime zest, and 2 tsp of fish sauce.
Step 5
Heat the sunflower oil in a wok and fruit the garlic and red chili. Add in the chicken mince and sprinkle over some chicken seasoning. Fry for 2-3 minutes on a middle high heat.
Step 6
Add the lime dressing to the mince, and fry for another 2 minutes or until the meat is fully cooked throughout. Add in the peanuts and season to taste with salt and pepper.
Step 7
Divide the rice on the plates, and add 3 little gem wraps to each. Fill with the chicken mince and pour remaining sauce over the rice. Serve with the sweet & sour cucumber and sprinkle over the coriander
