Lemon Chicken Orzo Soup

Instructions

Step 1
Place a large pot on the stove, and as the pot begins to heat, pour olive oil in.
Step 2
On your cutting board, use your knife to smash 4 garlic cloves – add to the pot.
Step 3
Add 1lb of chicken thighs to the pot, and sprinkle with salt and ground pepper.
Step 4
Immediately after, add ~8cups of chicken broth to the pot, and turn up the heat to bring to a boil. Let the chicken and garlic cloves boil in the broth for at least 15 minutes.
Step 5
Use tongs to pull the chicken out of the soup pot and place on a cutting board so you can dice it.
Step 6
While the broth is still boiling, add the orzo pasta and let it boil for 8 minutes.
Step 7
Drain and rinse the chickpeas, and add those to the broth, along with the bag of frozen chopped spinach while the pasta is cooking.
Step 8
Add the diced chicken back into the soup. Let it cool, and then ladle the soup into individual containers and store in the refrigerator or freezer.
