Instructions
Step 1
Simmer 1 cup strawberries with ⅔ cup water about 3 minutes.
Step 2
Blend sugar, cornstarch and water and add to strawberry mixture. Boil one minute, stirring constantly. Cool.
Step 3
Of the 3 cups of fresh strawberries remaining, save ½ cup choice berries for garnish. Combine the remaining 2½ cups berries with the cooled, cooked strawberry mixture.
Step 4
Spoon generous amounts of the filling onto each crepe and fold crepe so that the edges overlap slightly on top-the classic fold.
Step 5
Top with powdered sugar or whipped cream and garnish with whole strawberries.
Step 6
Variation: Any fresh fruit such as blueberries or peaches may be substituted for strawberries.
Step 7
In a hurry, prepared pie fillings may be substituted for fresh filling.
