This single serve glass bowl meal prep is such a game changer and I canβt believe how easy it is! If you enjoyed the last one then I promise you this one is even better!! π

Ingredients (for one serve):
50g x raw basmati rice π
150g x lean boneless chicken breast (diced)
1/2 cup x diced capsicums π«
1/4 cup x diced red onions π§
1/4 packet x fajita seasoning (old El Paso)
100ml x chicken stock
20g x shredded mozzarella cheese π§
Optional toppings when serving:
Sliced avocado π₯
Nandos perinaise sauce

Step 1
Method:
Preheat the oven to 180 Degrees Celsius.
In a glass meal prep container add your rice, chicken, capsiums, onion, fajita seasoning and then the stock. Mix until everything is well combined.
Top with the mozzarella cheese.
Bake in the oven for 30-40 minutes until cooked.
I covered this with alfoil halfway through baking to stop the top from getting burnt.
Let cool and store in the fridge!
Optional: when serving add sliced avocado and sauce of your choice!
