Ingredients

1 Tbspextra virgin olive oil
3garlic cloves
minced
2yellow onion
medium sliced
2red bell peppers
chopped
2carrots
large diced
2stalks celery
diced
1sweet potato
peeled chopped
2 lbsground turkey
1 ½ cupswater
15 ozcan tomato sauce
15 ozcan diced tomatoes
3 Tbspchili powder
1 Tbspcumin
1 Tbsppaprika
1 tspcayenne pepper
1 tspsea salt
½ tspblack pepper
1 tspred pepper flakes
2avocado
Instructions
Step 1
Heat oil in large cast iron pan over medium heat. Add garlic, onions, bell peppers, carrots, celery, and sweet potato. Saute for 7-9 minutes until soft. Remove from pan.
Step 2
Add turkey to pan and cook until it starts to brown. About 7 minutes, mixing often to break up chunks. Add 1 1/2 cups water, tomato sauce, tomatoes in their juices, chili powder, cumin, paprika, cayenne, salt, black pepper, and red pepper flakes.
Step 3
Add veggies back, bring to a boil. Then reduced to a simmer. Keep uncovered. Cook for about 45 minutes. When it's done, add extra spices to reach your desired flavor. Slice avocado for garnish and enjoy!
