½ cupunsweetened coconut milk
¼ cupvegetable broth
1 tablespooncurry paste
1 teaspoonginger
grated
½ teaspoonturmeric
ground coriander
¼ cupgreen beans
trimmed and havled
0.25red bell pepper
thinly sliced
¼ cupspinach
1lime wedge
for serving
fresh cilantro

Instructions
Step 1
Preheat oven to 400°F (200°C).
Step 2
Place fish in a baking dish.
Step 3
Combine coconut milk, broth, curry paste, ginger, and turmeric in a bowl.
Step 4
Pour sauce over the fish.
Step 5
Add green beans and red pepper.
Step 6
Bake for 10-12 minutes, or until fish is cooked through.
