Ingredients

1 cuplow-sodium beef broth
5garlic cloves
minced
1red onion
diced and divided
2limes
Juice of, divided
1 tablespoonground cumin
1 tablespoondried oregano
2canned chipotle peppers in adobo sauce

2bay leaves

32 ouncesbeef chuck roast
trimmed and cut into 2-inch cubes
2 teaspoonskosher salt

1 ½ cupscorn kernels
2tomatoes
large, diced
16corn tortillas
Instructions
Step 1
Set Up Slow Cooker: In your slow cooker, stir together the beef broth, garlic, half of the red onion, the juice of lime, cumin, oregano, and chipotle. Add the bay leaves (if using), beef, and season with salt.
Step 2
Cook: Cover the slow cooker and cook on low heat for 8 hours. Shred the beef in the cooker and stir into the sauce.
Step 3
Make Salsa: In a small bowl, stir together the remaining red onion, remaining juice of lime, corn, tomatoes, and salt.
Step 4
Serve: Serve the beef and salsa with the corn tortillas.
