Miso, beans & leeks are a combo of dreams. The flavours compliment each other so well and it’s just delicious with a hunk of bread for mopping everything up.

Instructions
Step 1
Slice the leeks into 2-3cm rounds and fry in butter for 3-5 minutes per side
Step 2
Remove and fry the shallots in the same pan for 5 minutes before adding the garlic for another minute.
Step 3
Chuck in the bay leaf and the beans, including their soaking liquid, followed by some nutritional yeast.
Step 4
In a separate bowl, mix miso with some hot water and then add that in too.
Step 5
Season to taste and the let simmer for 5 minutes before serving.
