Instructions
Step 1
Pop the pasta onto boil in a large pan of salted water, cook for 1-2 mins less than the packet instructions.
Step 2
Sauté onion and garlic for 10 min,
Step 3
Blanch the spinach and basil, squeeze out water and add to a high speed blender with the beans, lemon, nooch, 1/2 a cup of pasta water & sautéed onion & garlic. Blend until super smooth.
Step 4
Combine pasta and sauce, top with parmesan & freshly cracked black pepper.

OK this picture doesn't do it justice. It was so bright and fresh and beautiful and it tasted phenomenal! I added a few things!
1. Throw 2 or 3 more garlic cloves in there
2. Add roughly 1/2 cup of cottage cheese to increase protien values AND make sauce more rich and creamy
3. Go for more parmesan! I did about a half cup of fresh shredded and it was out of this world.
4. We made about a pound of chicken cut into bite sized pieces. I threw them into the onion pan and they were done by the time the pasta was finished cooking.
This will be in our biweekly rotation.
