Pasta with Lentils and Caramelized Onions

This is such an easy and affordable dish to make from pantry items you most likely have on hand at all times. Pasta and lentils with caramelized onions. It's so simple and delicious. A guaranteed hit that gives you the fiber and protein you need for a balanced perfect meal.

Instructions
Step 1
Place lentils in a strainer in a bowl and submerge them in water for about an hour or more.
Step 2
In a large saucepan with a lid, heat up 2 tbsp of cooking oil. Add the sliced onions into the pan and cover and let them cook until translucent and beginning to brown.
Step 3
Keep mixing the onions every 5 minutes for about 20 minutes until they are all golden in color, be careful not to burn them so be sure to check every 5 minutes to make sure.
Step 4
As you're cooking the onions, in a large pot, boil your pasta in salted water until fully cooked. Drain and set aside.
Step 5
Once the onions are done, remove a large ladle of them to set aside for topping/garnish.
Step 6
In the large saucepan with the remaining onions, add the soaked lentils and spices and stock.
Step 7
Bring to a boil then lower and let it simmer for 20 minutes until all the liquid is absorbed and the lentils are fully cooked and soft. (Though they should retain their shape as brown lentils should not become mush)
Step 8
Add in the pasta and mix well. Taste test for salt or spices and add as you'd like.
Step 9
Top with the remaining caramelized onions and chopped parsley.
Step 10
Serve with a side of plain yogurt and lemon wedges.
