Shredded Honey Chilli Chicken 🍯🌶️
Serves 3
Ingredients:
3 chicken fillets chopped (marinated in 1 tbsp chilli powder, 4 tbsp soy sauce, 1 tbsp chilli sauce, 1 tbsp sriracha for 5-10mins)
1 and 1/2 red peppers chopped
1 small white onion, chopped
2 Handfuls of sugarsnaps.
2 spring onions, chopped
2 heaped tbsp cornflour
1 tbsp garlic
1 tbsp ginger
Sauce:
4 tbsp honey
3 tbsp sweet chilli sauce
8 tsp dark soy
2 tbsp sriracha sauce
1 tsp cornflour (mixed in 20mls cold water)
Serve with rice/ noodles
Method:
1. Place the marinated chicken in a bowl and coat it with cornflour.
2. Transfer the coated chicken to the air fryer, spraying it with Frylite oil. Airfry for 20 minutes at 200 degrees, remembering to mix every 5 minutes.
3. Combine all the sauce ingredients in a separate bowl and thoroughly mix them.
4. In a pan, on medium to high heat cook the pepper, onion, garlic, and ginger for 2-3 minutes until the vegetables soften.
5. Now, add the sugarsnaps and the prepared sauce, stirring for 3-4 minutes until the sauce thickens. Reduce the heat afterward.
6. Once the chicken is done in the air fryer, incorporate it into the pan with the vegetables.
7. Serve the dish with rice or noodles.
