Crispy Korean Chicken Sandwich
Crispy, KOREAN CHICKEN SANDWICH!
Made in the air fryer and glazed in a gochujang sauce. Recipe below! Save.
Ingredients - makes 2
2 Chicken thighs, boneless/skinless
1/4 tsp garlic granules, salt, black pepper and gochugaru
1-2 Brioche buns, lightly toasted
Sliced gherkins (optional)
Kimchi mayo or kewpie mayo
For dredging
1 egg, beaten
Crushed cornflakes
For the sauce-
1 tbsp Gochujang paste
1 tbsp Brown Sugar
2 tbsp Soy sauce
1/4 tsp Garlic, minced
1/4 tsp Ginger, minced
1 tsp Sesame oil
Method
Step 1 - Rub the chicken thighs with garlic, salt, black pepper and gochugaru. Dip each piece in the egg and then in the cornflakes, patting them in well.
Step 2 - Set your air fryer to 200c, place in the coated chicken thighs and spray with a little oil, cook for 15 minutes, turning half way through. Always check the meat has cooked through with a meat thermometer.
Step 3 - For the sauce
In a pan on low heat, add the sesame oil, once hot, add the garlic and ginger and sauté till fragrant. Now add the soy sauce, gochugaru and stir. Simmer for a few minutes then remove from the heat. Brush or dip the chicken in the sauce covering all sides.
Step 4 - Toast the brioche buns, add a dollop of mayonnaise, and stack with the chicken, gherkins, and slaw ! Enjoy!
