Step 2
Clean, top, and halve the carrots, then mix the marinade and coat the carrots, leaving them for 30 minutes. Save a few tbsp of the marinade for later.

Step 3
Place the carrots on a lined baking tray, then roast in the oven for 20-30 minutes at 350°F.

Step 4
Blend the soaked cashews with the other ingredients for the cashew cheese. Add water to loosen if needed.

Step 5
Score, pierce, then bake the puff pastry sheet for the first 15 minutes with the carrots, then allow to cool whilst the carrots finish.

Step 6
Spread the cashew cheese across the puff pastry, then layer the carrots on top before baking for another 5-10 minutes.
Step 7
Heat the glaze from earlier until sticky, then brush onto the carrots, top with parsley, and enjoy.
