Fajita Chicken Tortilla Lasagne/Pie
Fajita chicken tortilla pie 😍 absolutely delish and super high in protein, they’re kinda like enchiladas but without having to roll them up 🤣 recipe serves 4!

Ingredients
4 servings
420gdiced chicken breast
2peppers
sliced into strips
1red onion
large
30gfajita seasoning
1 Tbsptomato puree
1 x 400gtomatoes
1 tinmixed beans
drained
125gcheese
grated, I used some Red Leicester, some cheddar & some mozzarella
100gPhiladelphia
lightest
70gGreek yoghurt
lemon
or lime
spring onion

Instructions
Step 1
Fry off the chicken, onion and peppers in a pan until softened and cooked through.
Step 2
Add the fajita seasoning followed by the tomato purée, the tinned tomatoes and beans. Stir and simmer for at least 10 minutes.
Step 3
Whilst it’s simmering mix the cream cheese, yoghurt and 50g of the grated cheeses in a bowl.
Step 4
Add 1/3 to a baking dish, then add a layer of wraps (cut them up to fit!) followed by 1/3 of the cheese mix.
Step 5
Repeat twice more, finishing with the cheese mix on top (I also spread the dregs of the tomato sauce on top of the last wrap for a bit of colour 🙊)
Step 6
Add the remaining cheeses (75g) on top then bake in the oven for 25 minutes until golden and bubbly
