Ingredients
6 servings
1 headromaine lettuce
pale green inner leaves only
3 cupsbaby spinach leaves
1Beefsteak tomato
cubed
0.5English cucumber
cubed
1red onion
small, thinly sliced
¼ cupraisins
or dried figs, chopped
1 ½ tablespoonsfresh lemon juice
1 ½ tablespoonsolive oil
1 teaspoondried greek oregano
½ teaspoonkosher salt
¼ teaspoonblack pepper
⅓ cupcrumbled non-fat feta cheese
Instructions
Step 1
Place the romaine, spinach, tomato, cucumber, red onion, and raisins in a large salad bowl and toss to combine.
Step 2
Place the oil, vinegar, oregano, salt and pepper in a small bowl and whisk together.
Step 3
Pour over the salad, gently toss, sprinkle with the feta cheese and serve immediately.
