Turkey Meatloaf
This lighter meatloaf is great for dinner but equally delicious leftover in a sandwich.

Ingredients

1 teaspoonolive oil
1spanish onion
small, chopped
2garlic cloves
finely chopped or pressed
1 teaspoondried greek oregano
2 tablespoonsDijon mustard
½ teaspoonblack pepper
¼ teaspoonsalt
¾ cuptomato ketchup
or barbecue sauce
½ cupflat leaf parsley leaves
chopped fresh Italian
2slices white bread
good quality, or crusts?
1egg
large, lightly beaten not egg white?
2 poundslean ground chicken
or turkey
Instructions
Step 1
Preheat the oven to 350 degrees. Lightly grease an 8 x 4 inch loaf pan.
Step 2
Place a medium size skillet over low heat and when it is hot, add the oil. Add the onion, garlic and oregano and cook until the onion is golden, about 10 minutes. Transfer to a large mixing bowl and set aside to cool.
Step 3
In the meantime, soak the bread in the stock until it is moist, about 2 minutes. Drain off as much liquid as possible. Add the bread to the cooled onion mixture.
Step 4
Add the eggs and ground meat and mix, by hand , until everything is thoroughly incorporated. Place the mixture in the prepared loaf pan, transfer to the oven and cook for about 1 hour and 15 minutes.
