healthy pimento cheese!!
healthy pimento cheese!! a lighter version of a southern classic made with labneh (aka strained yogurt)! as a California girl born and raised, I did not grow up eating pimento cheese, but my husband Grant is from Georgia, and this is one of his favorite foods! there’s absolutely nothing wrong with pimento cheese in its original form, but if you’re looking for something a bit lighter, you gotta try this version! the labneh is nice and thick and a perfect substitute for the mayo/cream cheese in this dish. AND it is Grant (aka southern man) approved.

Step 1
If you’re using Greek yogurt, you’ll want to prepare it the night before. DO NOT SKIP THIS STEP because it’s key to getting the right texture. You’ll want to strain the yogurt to turn it into labneh. Place a strainer over a bowl, and line with cheesecloth or coffee filters. Add the Greek yogurt, and wrap the cheesecloth around it (or cover with another coffee filter). Refrigerate overnight, or for at least 12 hours.
Step 2
Mix everything together in a medium bowl. Serve with veggies and crackers or spread on a sandwich or toast!
