for the noodles
Step 1
Mix flour and salt together on a clean work surface. Make a well in the center, then add in the eggs. Using chopsticks, gently break up the eggs. Then using your hands, work through the dough until a shaggy ball forms. Don’t worry if it gets messy, it will all come together. Knead for 8-10 minutes until smooth, then wrap in cling film and rest for 30 minutes.
Step 2
Cut into 4 portions, and working with 1 portion at a time, roll to your desired thickness. Make sure to use cornstarch to dust as you roll. Fold the dough onto itself in layers, and cut to desired width.
Step 3
To cook the noodles, bring a large pot of water to a boil, and cook for 60-90 seconds. Drain, and assemble your sauce.

Step 4
Place the noodles into 2 portions into a mound with garlic, spring onion, sesame seeds, and chili flakes. Heat oil until very hot and pour over to sizzle. Add soy sauces and black vinegar. Toss well until combined, and enjoy.
