1 tablespooncurry powder

½ teaspoonturmeric

¼ teaspoongarlic powder

12 ouncescan unsweetened coconut milk

1bell pepper
chopped

1broccoli floret
chopped

1zucchini
chopped

brown rice
Cooked, or quinoa, for serving

Fresh cilantro
chopped, for garnish, optional
Instructions
Step 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2
Combine beef with olive oil, spices, and coconut milk in a bowl. Mix well.
Step 3
Add chopped vegetables and toss to coat. Spread evenly on the baking sheet.
Step 4
Bake for 20 minutes, or until beef is cooked through and vegetables are tender.
Step 5
Serve over cooked rice or quinoa and garnish with cilantro (optional).
