Pea dip (ZOE)
When we posted our flaxseed crackers and dip lots of you asked for the recipe so here it is.
A super versatile, veg-packed pea dip that takes advantage of our freezer favourite the frozen pea.
This dip is delicious as a snack with crudites, crackers or make it a meal by topping it off with grains and roasted vegetables.
Here’s how to do it:
1.5 cups/200g frozen peas, quickly defrosted in cold water
2 spring onions
a handful each of fresh mint and coriander
juice of 1 lemon
3 tbsp olive oil
1 green chilli
optional: 1 preserved lemon
Salt to taste

Taste and add extra salt or lemon juice if needed.
Step 3
We’ve served ours with spelt, roasted tomatoes, mushrooms and brocolli, pickled red onions and a sprinkling of hemp seeds.
