Instructions

Step 1
Add all of the seasonings into a bowl and combine together.
Step 2
Slice the potatoes into wedge shapes and place in a large bowl, spray with some cooking spray, add a third of the seasoning mix and then air fry or oven bake at 200C° for 20 mins flipping half way.
Step 3
Slice up the chicken breast into bite size chunks and place into a bowl with a third of the seasoning you just made.
Step 4
In the mean time, prep the veg by slicing the onion and bell peppers into small rough pieces. Slice the chilli pepper and garlic thinly. Finally, slice the spring onion.
Step 5
Heat 1/2 tbsp of olive oil in a pan on medium high heat and then add the seasoned chicken breast.
Step 6
Fry for around 6-8 mins until fully cooked through and then set aside on a plate for later.
Step 7
Add the remaining 1/2 tbsp of olive oil to the pan and then add the brown onion, bell peppers and spring onion stems and fry for 4 mins on high heat.
Step 8
Then add the sliced chilli and garlic and fry for a further minute. Add the remaining seasoning left.
Step 9
Once the potato wedges are done, take them out and add them in with all of the wedges and mix around.
Step 10
Finally, pour in the soy sauce and add the remainder of the spring onion greens and give a final stir through before serving into two portions.
