Salt and pepper chips’ with chicken

Instructions

Step 1
1. Preheat the oven to fan 200°
Step 2
2. Slice the baby potatoes in half.
Step 3
3. Place the potatoes in a roasting dish and add in the olive oil, 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic granules and 1/2 tsp chinese five spice.
Step 4
4. Mix all together and place in the oven for 45 mins, stir mid way through the time.
Step 5
5. Julienne the onion, cut the peppers into small squares, slice the chilli peppers and chop the garlic finely.
Step 6
6. Heat 1/2 tbsp of sesame oil and fry all of the veg for about 5 mins until softened.
Step 7
7. Dice the chicken breast and season with 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic granules and 1/2 tsp chinese five spice.
Step 8
8. Heat 1/2 tbsp sesame oil and fry the chicken for about 6-8 mins until cooked through.
Step 9
9. Add the chicken to the veg from before. Then add the cooked potatoes from the oven.
Step 10
10. Pour over the soy sauce and stir through.
Step 11
11. Serve into 4 equal portions.
