Ingredients

800gtop round beef
cut into cubes, one of the leanest cuts of beef
3garlic cloves
minced
2 tspsalt
divided
2 tspBlack Pepper
divided
2 tspParsley
divided
2 tspolive oil
divided
20gLight Butter
for cooking
800gSweet Potatoes
Uncooked, cut into cubes
1 Tbspsmoked paprika
2Garlic Cloves
Minced
40gLight Cheddar Cheese
or any low fat cheese
Instructions
Step 1
Cut beef into 2" cubes
Step 2
Add garlic, salt, black pepper, parsley and olive oil to beef. Mix well.
Step 3
Cube sweet potatoes
Step 4
Add salt, black pepper, smoked paprika, garlic, parsley, and olive oil to sweet potatoes.
Step 5
Air fry or roast sweet potatoes at 375 degrees fahrenheit until done--17 to 20 minutes.
Step 6
While the sweet potatoes are cooking, heat a pan over medium high heat. Add butter and beef mixture, cook to desired temp.
Step 7
Once beef and sweet potatoes are done, combine in skillet, add fresh parsley and sprinkle cheese on top. Cover until cheese is melted. Enjoy!
