Sweet Potato Chili

Ingredients
6 servings
1 cupred pepper
diced
1 cupyellow pepper
diced
2 cupssweet potatoes
diced
1can petite diced tomatoes
2 tablespoonscumin
2 tablespoonsolive oil
¼ cupred onion
diced
1can low sodium light red kidney beans

Instructions
Step 1
Dice sweet potato into chunks
Step 2
Dice the onion and peppers.
Step 3
Drain the beans, rinse.
Step 4
Heat oil in pan.
Step 5
Sauté the sweet potato in oil for 5 minutes
Step 6
Add peppers and onions to skillet
Step 7
Add cumin
Step 8
Saute for another 5 minutes. Stir to prevent burning.
Step 9
Add can of diced tomatoes (with juices) and stir in.
Step 10
Let simmer for 5 minutes
Step 11
Add beans, stir in.
Step 12
Simmer for 5 minutes.
Step 13
Serve. Add fresh lime juice and cilantro for garnish. Also good if you add guacamole... but ya know... calories.
