Instructions
Step 1
Dice chicken and season with seasonings listed, juice from half the lemon & olive oil.
Step 2
Fry chicken for 10 minutes in a frying pan and set aside on a plate.
Step 3
Finely dice onion & fry with butter in a pan
Step 4
Add tomatoes, spinach, juice from rest of the lemon & double cream to the onions and cook until spinach has wilted
Step 5
Add chicken back into the pan & cook for another 5 minutes
Step 6
Serve with rice or potatoes
