Who doesn’t love a 2-for-1!? These pretzel bites are made with the same recipe base. Just be sure to leave off the pretzel salt for the cinnamon sugar pretzels

Ingredients
4 servings
300gBread flour
or All Purpose flour
15gbrown sugar
4.5ginstant dry yeast
5gkosher salt
15gunsalted butter
room temperature
¾ cupwater
100-110 degrees F
Pretzel salt
Coarse, for traditional pretzels only
Cinna-Sugar Pretzels
¼ cupbutter
melted
⅓ cupsugar
2 tspcinnamon
Baking soda bath
⅔ cupbaking soda
12 cupswater
Egg wash

Instructions
Step 1
1. In a medium sized bowl, combine the flour, brown sugar, yeast, salt and whisk to combine.

2. Add the butter and the water and mix with a fork until a shaggy mass of dough forms.
Step 3
3. Turn the dough out onto the counter top and knead with your hands until a smooth ball of dough is formed, about 8-10 minutes.

4. Transfer the dough to a greased bowl and cover with plastic wrap or a towel. Allow the dough to rise for for 60-90 minutes or till the dough ball has doubled in size.

5. Punch down the dough and divide into 4 pieces, and roll into a log that is about 1 inch in diameter.

6. Cut into 1 inch pieces and place on a parchment paper lined cookie sheets.

7. Cover the nuggets with a towel and let the puff up a little more for about 20-30 minutes.

8. While the nuggets rise, pre-heat the oven to 425 degrees F with racks in the upper and lower thirds of the oven and prepare your baking soda bath.
Step 9
9. To make the baking soda bath, bring the water up to a gentle simmer over high heat. Reduce the heat to low, and slowly add in the baking soda.

10. Working in batches, add the pretzels to the bath and let them soak for about one minute, flipping half way.

11. Remove from the water and place back onto the prepared baking sheets.

12. If you like your pretzels to be a deep dark brown, brush your nuggets with an egg wash and top with pretzel salt.

13. Bake for 10-12 minutes, making sure to rotate the baking sheets half way.

14. Allow to cool for 10 minutes and enjoy!
