Ingredients
2 servings
For the Pulled Pork
For the Noodles
2spring onions
chopped, greens reserved to garnish
1clove garlic
minced
ginger
1cm, grated
2 Tbsprunny tahini
1 Tbspsoy sauce
1 Tbsprice wine vinegar
1 Tbspbrown sugar
30mloil
300gudon noodles
pre cooked
To Serve
Instructions
Step 1
1. Preheat your oven to 190c (fan).
Step 2
2. Start by shredding your mushrooms into thin strips and add to a baking sheet with oil and a pinch of salt. Bake for 18 minutes, mixing halfway through to draw out the moisture.
Step 3
3. Once they are mostly dried out and starting to go crispy, you can add the remaining seasonings, mix again and bake for a final five minutes.
Step 4
4. Place 30ml of oil into a small saucepan and heat until really hot
Step 5
5. Add all of the ingredients for the noodles aside from the tahini into a heatproof bowl then carefully pour over the hot oil. Add the tahini and a drop of hot water and stir to combine.
Step 6
6. Submerge the noodles in boiling water to heat through, drain and add to a bowl with your sauce and the mushrooms.
Step 7
7. Serve with lime, chilli oil and the greens of the spring onion.
