Instructions
Step 1
Add the cottage cheese and taco seasoning to a food processor or blender. Blend until smooth and creamy.
Step 2
Add the cottage cheese to a microwave safe bowl or small pan. Stir in the shredded cheese and Rotel tomatoes. Microwave for 1.5 - 3 minutes, stirring every 30 seconds, until the cheese is melted. Stir vigorously until everything is well combined. If using a saucepan, heat over medium low heat, stirring often, until the cheese is melted.
Step 3
Add any toppings you like including fresh cilantro, jalapenos, salsa, hot sauce, or pickled onions. Serve warm with tortilla chips, crackers, or veggies.
