Paneer Tikka Toast
Ingredients
1 tbsp mustard (rai / sarson) oil
1 1/2 tsp chilli powder
1 tsp coriander-cumin seeds (dhania-jeera) powder
1 tsp chaat masala
1 tsp dried fenugreek leaves (kasuri methi)
salt to taste
16 paneer (cottage cheese) cubes
4 toasted bread slices
4 tsp butter
4 tsp tandoori mayonnaise
2 tsp green chutney
2 tsp tomato ketchup
16 capsicum cubes
16 onion cubes
8 tbsp grated processed cheese
dry red chilli flakes (paprika) for sprinkling
dried oregano for sprinkling
Method
In a deep bowl, add mustard oil, chilli powder, coriander-cumin seeds powder, chaat masala, dry fenugreek leaves, salt and mix well.
Add the paneer cubes and toss gently. Keep aside.
Take a toasted bread slice on a clean, dry surface.
Apply 1 tsp butter, 1 tsp tandoori mayonnaise, ½ tsp green chutney and ½ tsp tomato ketchup evenly over it.
Place 4 pieces of paneer on it. Put a capsicum piece near each paneer piece on one side and onion cube on another side of the paneer.
Finally sprinkle 2 tbsp grated cheese evenly over it and little chilli flakes and dried oregano.
Repeat steps 3 to 6 to make 3 more toasts.
Bake in a pre-heated oven at 200°c (400°f) for 10 to 15 minutes or till crisp and cheese has melted.
Cut into 4 pieces and serve immediately.
