Peel and grate the carrots and roughly chop pecans.

In a large bowl, using a hand mixer whisk eggs, sugar, oil, and vanilla until well combined.

Add flour, baking powder, cinnamon, a pinch of salt and nutmeg. Mix with a spatula until well combined. Then add carrots and pecans and mix again.
