Blueberry Chia Pudding ๐ซ
Just the perfect amount of sweet, this chia pudding is a great option for breakfast, snack or dessert. It contains large amounts of fiber, omega 3 fatty acids and protein. Paired with the antioxidants in blueberries โ the world is your oyster!

(Makes 2)
1 1/2 cup frozen blueberries
2 tbsp maple
1 1/4 cup unsweetened vanilla oat milk*
1/2 cup chia seeds
1/4 tsp salt
๐ง๐ผ๐ฝ๐ฝ๐ถ๐ป๐ด
1/4 cup pecans
1 tbsp maple syrup
Pinch of salt
*Substitute with any non dairy milk. Add 1 tsp vanilla extract if using regular flavored.

Nutrients are retained in frozen berries due to being flash frozen at the peak of their nutritional value. Fresh fruits decrease from the time it's picked to the amount of shelf life.

Blend blueberries until liquid. There will be a bit of skin pieces and that's perfectly ok.
Add the remaining ingredients to the blended berries and stir until evenly combined.
Split mixture into two serving glasses, cover and chill in the fridge for about 2hrs.
Grill the pecans on medium heat until slighty toasted (2-3 mins). Sprinkle the salt and drizzle the maple syrup, stir, cook for another 1 min before removing from the heat. Cool before handling.
Break into pieces for topping and sprinkle on the chia pudding with spare blueberries when ready to serve!
