Step 1
Cook pasta as directed, aldente
Step 2
Fry some minced garlic and set it aside. If you're fancy you can slice some really thin garlic shavings and fry those as well to top, but the garlic in the sauce is key
Step 3
Heat up a large frying pan with a little olive oil and cook down the white mushrooms. Do not add salt, so they get dark brown instead of soggy
Step 4
Remove white mushrooms from pan, repeat process with brown mushrooms
Step 5
Remove from pan, add scallion and oil and cook until golden and slightly sweet
Step 6
Add miso paste and cream to the onions in the pan. Stir to combine and bring to a simmer.
Step 7
Add noodles, mushrooms, red pepper, garlic, and parmesean. Toss to coat with the sauce. Salt after you add parmesean not before.
Step 8
To serve, top with chives and fried garlic shavings if you made them. Add a little of the reserved pasta water if there's not enough liquid to thin out the sauce.
