Step 1
Fry the mushrooms until caramelised and then remove from the pan after 7-10 minutes.
Step 2
Begin cooking your pasta now.
Step 3
Dice the onion and sauté in olive oil and garlic for 5 minutes until translucent, then add in garlic and cook for another minute or so.
Step 4
Deglaze the pan with white wine and let the ethanol burn of for a minute or so.
Step 5
In a separate bowl, whisk the miso paste with a bit of the pasta water until smooth and then pour it back into the pan along with the mushrooms.
Step 6
Stir in the cooked pasta along with more pasta water to make it silky and finish with plenty of black pepper.
