Oven baked chicken w/ red pesto

My oven baked chicken recipe with some red pesto thrown into the mix! Served with rice this time instead of spaghetti BUT this would be unreaaaaaaal with some pasta 😮‍💨 My fave thing about this recipe is it’s literally a case of throwing it ALL into an oven dish and letting it cook! That’s it!! Plus the Parmesan sprinkled on top makes it go really crispy and it’s beaut 🥵 Ingredients to serve two: 2 large chicken breasts 2 handful cherry tomatoes 60g reduced fat soft cheese / single cream 2tbsp red pesto 10g Parmesan 200mls chicken stock cube 1tsp paprika, mixed Italian herbs, garlic, salt and pepper To serve: basmati rice and broccoli Method: Preheat your oven to 200, then add your chicken to an oven dish with some oil followed by the cherry tomatoes. Season your chicken with the paprika, mixed Italian herbs, salt and pepper. In a jug, make up the chicken stock and then add in the soft cheese (or cream) and stir until the cheese dissolves. Pour this into the oven dish. Add the pesto in, putting some on the chicken itself and some into the sauce and giving it a stir. Pop this into the oven for 25-30 mins. Make sure tour chicken breast is cooked through and piping hot before serving. Macros (without rice) 390 calories 48g protein 20g fat 2.3g carbs

Instructions

Step 1
Preheat your oven to 200, then add your chicken to an oven dish with some oil followed by the cherry tomatoes.
