Instructions
Step 1
Cut all vegetables and keep potatoes and other root vegetables separate. Cut potatoes pretty small as big chunks won’t cook all the way.
Step 2
Toss root vegetables with olive oil and seasoning
Step 3
Bake on a sheet pan at 400F for 15mins
Step 4
Toss other vegetables with olive oil and seasoning
Step 5
Once potatoes are done cooking, add the other vegetables to the sheet pan and toss. Rotate pan 180° and put back in oven
Step 6
Bake for another 25 minutes
Step 7
Once vegetables are done cooking, top with shredded cheese and put back in the oven to let melt
