Instructions

Step 1
Preheat the oven to 425 F.
Step 2
Make rice according to your package instructions and season with salt and pepper.
Step 3
Cut up cucumbers.
Step 4
Chop up the salmon into bite sized pieces, about 1 inch.
Step 5
In a larger bowl add the salmon and mix with ginger and soy sauce and let marinate 5 minutes.
Step 6
In a bowl combine the gochujang, mirin, soy sauce, sugar, sesame oil, and garlic and set aside.
Step 7
Place the salmon on a baking sheet in an even layer and bake for 8 minutes.
Step 8
Remove the salmon from the oven and brush the gochujang mixture on top. Change the oven settings to broil and add back in the oven for 2-3 more minutes until the salmon is cooked through.
Step 9
In a bowl add the rice, then top with salmon, cucumbers, and green onions for garnish.
