In Korea, BBQ is a famous chicken franchise, and their Jamaican chicken is one of the most loved flavors. I had so much fun recreating it at home with a Korean twist — and it turned out amazing! 😋

500gboneless chicken thighs

1 ½ Tbspsugar

1 ½ Tbspsoy sauce

1 Tbsptonkatsu sauce
pork cutlet

1 Tbspcorn syrup
or honey

½ TbspKorean chili flakes
or paprika powder

½ Tbspminced garlic

½ Tbspgochujang
Korean red pepper paste

½ tspcinnamon powder

Instructions
Step 1
In a bowl, mix together: 1 ½ tbsp of sugar, 1 ½ tbsp of soy sauce, 1 tbsp of cooking oil, 1 tbsp of lemon juice, ½ tbsp of minced garlic, ½ tbsp of Korean chili flakes or paprika, ½ tbsp of gochujang, ½ tbsp of starch, 1 tbsp of tonkatsu sauce, ½ tsp of cinnamon, a little black pepper, and ginger powder if using.
Step 2
Rinse the chicken in cold water and pat dry with paper towels. Add to the sauce and coat well. Cover with plastic wrap or a lid and marinate in the fridge for at least 3-4 hours. If you marinate it overnight, the flavor gets even richer.
Step 3
Place the chicken on parchment paper in an air fryer. Cook at 340°F (170°C) for 15 minutes, flip, brush with leftover sauce, and cook for another 10 minutes.
Step 4
The outside turns beautifully golden while the inside stays tender and juicy.
Step 5
Each bite is sweet, savory, and gently spicy with a hint of cinnamon.
Step 6
Enjoy it on its own or pair it with salad or fried rice.
