Silken tofu isn’t just for sauces & desserts - this mapo tofu is a Szechuan classic with a fiery, numbing sauce 🌶️ It’s a great way to try out silken tofu in savoury dishes and it packs in a decent 22g of protein per portion too.
Ingredients (serves 2)
2 tbsp chilli oil
6 cloves garlic
1 tbsp ginger
150g vegan mince
1 tbsp sichuan peppercorns - toasted & ground
1 tbsp soy
1 tbsp rice vinegar
1-2 tbsp doubanjiang (spice bean sauce)
0.75 cup stock
1 tsp sugar
1 tsp cornstarch + 1 tsp water
500g silken tofu
Instructions
1. Start by toasting and grinding your sichuan peppercorns, then set aside.
2. Add the chilli oil to a pan and get up to medium-high heat. Fry the garlic and ginger for a minute until softened.
3. Add the vegan mince and cook for a few minutes until browned, then add the ground sichuan pepper, soy, rice vinegar, doubanjiang and give it all a good stir.
4. Pop in the stock, sugar, cornstarch mix and bring to a simmer.
5. Carefully add the tofu, cover and gently simmer for 5 minutes.
6. Gently stir, serve and top with spring onions and extra chilli oil.
