Ingredients
8 servings
1 lbItalian sausage mild
hot or sweet
1yellow onion
small, finely chopped
½ cupSundried tomatoes in oil
drained
6garlic cloves
minced
5 cupschicken broth
1 ⅓ cupsheavy whipping cream
20 oz5 cheese tortellini
cajun seasoning
•seasoning i used, season to your liking
garlic powder
onion powder
1 packetsazon
salt
pepper
Boursin cheese
Instructions
Step 1
To a pot on medium heat add 1 tbsp of the oil from the jar of Sundried tomatoes.
Step 2
Add in your onion and sundried tomatoes sauté for 5 mins add in your garlic and sauté for 30-60seconds.
Step 3
Add your Italian Sausage and cook completely.
Step 4
Add in your seasonings, broth & heavy whipping cream bring to a boil (taste the soup and adjust seasoning if necessary )
Step 5
Add your Tortellini and cover and cook for 4-5 mins or until tortellini is warmed through.
Step 6
Remove lid and add your goat cheese and mix until cheese has melted .
Step 7
Add your spinach and mix, turn off heat and cover until spinach has wilted.
Step 8
Pour in bowl and top with Parmesan cheese..ENJOY💙
