Cookies and Cream Bundt Cake
Ingredients:
4 eggs
1.5 cups sugar
1 cup oil
1/2 cup sour milk (milk or non dairy alternative, mixed with a squeeze of lemon juice)
1 tbsp vanilla
2.5 cups flour
3 tsp baking powder
1 tsp salt
1 box vanilla pudding powder (~100g)
1 cup crushed Oreos
1/2 cup hot water
Icing:
1 cup icing sugar
5-6 tsp milk (or non dairy alternative)
1 tsp vanilla
Garnish: 2 additional Oreo cookies
Directions:
Preheat oven to 325°F.
In a large bowl, whisk together eggs, sugar, oil, milk and vanilla.
In a separate bowl, combine flour, baking powder, salt, pudding powder.
Slowly whisk dry ingredients with the wet mixture.
Fold in crushed Oreos and then fold in hot water.
Pour into greased and floured bundt pan.
Bake for about 60 minutes, until toothpick comes out clean.
Allow cake to cool slightly (about 10 minutes) and use a plastic knife to loosen cake from pan (thanks

Combine icing ingredients. Once cake has fully cooled, ice cake and top with additional crushed Oreos.
