Instructions

Step 1
Bring a large pot of salted water to boil
Step 2
Add the Tortellini and cook according to package instructions, then drain

Meanwhile, in a large skillet over medium heat, melt the butter
Step 4
When the butter melts, add the mushrooms, shallots, and 1 teaspoon salt and cook, stirring, for about 7 minutes, until the mushrooms start to soften.
Step 5
Add garlic and cook until fragrant, 1-2 min.
Step 6
Add the cooked Tortellini to the skillet, along with the thyme. Cook for another minute to heat through and season to taste with salt and pepper.
Step 7
Serve immediately. Garnish with cheese and more thyme.
