Creamy, cheesy mushroom gnocchi bake
Gimme all the warmth. Creamy, cheesy mushroom gnocchi bake with a crisp garlicky crumb. Comforting and delicious.
Ingredients:
300g mushrooms
1 shallot
5 cloves of garlic
175ml double cream
200ml veg stock
50g cheddar cheese
1 tbsp. Nutritional yeast
1 tsp smoked paprika
2 tbsp chopped chives
1 pack of gnocchi
Method:
Roughly cube the mushrooms and fry with a dash of salt in a dry pan until the water has evaporated then add a little olive oil. Next go in with the shallots and fry for 5 minutes then add garlic and smoked paprika. Fry for another minute, pour in cream, cheese, stock and nutritional yeast, mix well and then add gnocchi and combine. Sprinkle over breadcrumbs and bake in the oven at 190C for 20 minutes.
