1chicken breast
large, diced

1 cupbrown rice
cooked

1 Tbsplime juice

0.5avocado
sliced

2 cupsleafy greens

½ cupblack beans

½ cupcanned corn

⅓ cupCherry tomatoes
diced

⅓ cupCapsicum
diced

0.5red onion
diced

For Chicken Marinade
Instructions
Step 1
Place chicken in a large bowl, coat chicken with olive oil and lime juice
Step 2
Add remaining marinade ingredients to the bowl and toss until evenly coated
Step 3
In a pan over medium heat, cook the marinated chicken
Step 4
In a small bowl, mix cooked rice with lime juice, salt and pepper, set aside
Assembly
Step 5
Add greens to the bottom of the bowl, add chicken and then divide the remaining ingredients between the two bowls
