Instructions

Step 1
Mix 2 tbsp milk with the cornstarch in a small bowl to make a smooth slurry
Step 2
Whisk the cream cheese and salt in a medium bowl until smooth
Step 3
Fill a large bowl with ice and water
Step 4
Combine the remaining milk, cream, sugar, golden syrup, and vanilla seeds and bean in a saucepan. Bring to a rolling boil over a medium-high heat, and boil 4 mins.
Step 5
Remove from the heat and whisk in the cornstarch slurry.
Step 6
Bring back to a boil and cook for 1 min until slightly thickened. Remove from the heat.
Step 7
Gradually whisk the hot milk mixture into the cream cheese until smooth
Step 8
Pour into a zip loc bag and submerge in the ice bath. Let it stand in there for half an hour
Step 9
Remove the vanilla pod. Pour the mixture into ice cream machine and spin until thick and creamy
Step 10
Store in container with baking paper pressed against the surface. Freeze for 4 hours
