For the Loaf
230gcaster sugar
2lemons
Zest of, large
170mlplant milk
50mllemon juice
80gvegan plain yoghurt
I used nut
120mlvegetable oil
1 tspvanilla extract
350gplain flour
2 tspbaking powder
¼ tspsalt

Instructions
Step 1
Preheat the oven to 180c fan, line a 1lb loaf tin with parchment paper.
Step 2
Rub the sugar and lemon zest together, you should start to smell the citrus. Add in the milk, lemon juice, vanilla and oil. Whisk until combined.
Step 3
Add in the dry ingredients and whisk until you have a smooth batter
Step 4
Pour the batter into your tin and place in the oven for 55-60mins, or until a skewer comes out clean.
Step 5
Make sure your loaf is baked the whole way through, give it an extra 5mins if you're not sure
Step 6
Remove from the oven and make the drizzle by combining the sugar and lemon juice in a bowl.
Step 7
Heat for 30 seconds and stir to dissolve the sugar.
Step 8
Use a skewer to pierce holes all over the surface of the loaf. Pour over the drizzle whilst the loaf is still in the tin and leave to soak in whilst the loaf cools
Step 9
Once the loaf is cool, remove from the tin. Make the glaze by combining the icing sugar and lemon juice until smooth. Pour the glaze over the loaf allowing it to drip down the edges slightly. Top with extra zest if you like!
