CHICKEN PARM BURGERS WITH BASIL MAYO🌿
This recipe is such a fun take on chicken parmigiana and is a great dish when you’re looking to make something a bit different for dinner! 🍔🍅
INGREDIENTS
- 3 Chicken breasts (to skip the next three ingredients, buy ready made breaded chicken breasts)
- 1 egg
- 2 tbsp flour
- 75g breadcrumbs
- Handful grated Parmesan
- 1 ball mozzarella
- 3 brioche buns
- lettuce
Bail mayo
- 3 tbsp mayo
- 1 handful basil
- 1 tbsp olive oil
Tomato Sauce (homemade or store bought, ingredients for mine below)
- 1 tsp olive oil
- 1 can chopped tomatoes
- 1 onion
- 1 clove garlic
- 1 tbsp tomato puree
- 1 tsp sugar
- Salt & pepper
- 1 tsp oregano
METHOD
Tomato sauce:
- To medium heat add the olive oil and the onion, fry for 5 mins
- Add the garlic and fry for a further minute
- Add the chopped tomatoes, tomato puree, sugar, salt & pepper and oregano and bring to the boil
- Once boiling bring down to a simmer and cook for 10 mins
Chicken: (skip this step if you have bought pre breaded chicken breasts and instead cook them according to instructions)
- To three plates add the egg, flour and the breadcrumbs and dip the breast in each of the three in order
- Add to the oven at Gas 5 for 20-25 mins until browned
- Remove from the oven and top with the tomato sauce, sliced mozzarella, Parmesan, olive oil, salt and pepper
- Put back in the oven for 5 minutes
Basil mayo:
- To a bowl or food processor add the mayo, basil and lemon juice, blitz together
To build the toasted burger buns add the basil mayo to then add the lettuce and chicken. Serve with fries, salad or any side of choice and enjoy!
