Ingredients
4 servings

1 teaspoonolive oil

0.5white onion
peeled and finely sliced

2cloves garlic

150gmushrooms
cleaned and sliced

1red pepper
deseeded and cut into small chunks

2 teaspoonchilli powder

1 teaspooncumin

1 teaspoonred pepper flakes

1tin kidney beans

1tin cherry tomatoes

150gchicken breast
precooked

Fresh Coriander
torn, optional
Instructions
Step 1
Heat the oil in a large pan on a medium heat
Step 2
Fry the onions for 3-4 minutes, stirring regularly. Add the garlic and pepper and mushrooms and fry for a further 3 minutes.
Step 3
Add the chilli powder and cumin and combine well, stirring for 1-2 minutes before adding the kidney beans and tomatoes.
Step 4
Turn up the heat to bring to a simmer, reduce the heat, and continue to simmer for 15 minutes, stirring frequently.
Step 5
Add the cooked chicken for a final 5 minutes to warm.
Step 6
Serve with salad, rice or jacket potato.
