Instructions

Step 1
Dice peppers and onion, place on baking sheet and roast in the oven at 400° for 20-25 minutes.
Step 2
Place chicken, half of the enchilada sauce, green chiles, tomatoes garlic purée, onion powder, salt, black pepper, cayenne, roasted bell peppers and roasted onion in a slow cooker and mix. Slow cook on high for 2-3 hours or low for 5-6.
Step 3
Cook pasta for half the time instructed on package. While pasta is cooking, blend cottage cheese, cream cheese, cheddar cheese, cheddar powder, the 2nd half of the red enchilada sauce, and milk. Add salt and pepper to taste.
Step 4
When the chicken is done cooking, add the half cooked noodles and the queso sauce to the slow cooker and cook for another 15-20 minutes until sauce has thickened and pasta is fully cooked. Optional: mix in fresh cilantro
